About the Role

As Assistant Winemaker, you will work as part of Accolade Wines’ Barossa team creating wines for St Hallett, Grant Burge, Rolf Binder, Leasingham and other brands. Working with a hands-on approach, you’ll support the planning and implementation of grape intake through to bottling, working closely with the Winemaking, Cellar and Laboratory teams on a daily basis. You’ll be mentored by our talented Barossa Winemakers.

This is a full-time, permanent role based at our winery in Tanunda.

Key Responsibilities

  • Assist with the management of the receival and evaluation of grapes at intake 
  • Monitor and manage extraction rates and alcoholic and malolactic fermentation
  • Participate in the daily ferment tastings and the subsequent delivery of work orders
  • Assist with the monitoring and management of wine blending, additions, filtrations, bulk tanker and general cellar operations
  • Maintain relevant winemaking records and information within the AS400 bulk wine system
  • Assist with the management of bulk wine stock through effective ullage and routine wine analysis programs
  • Assist with ensuring all wine bottling and wine release date deadlines are met in line with the bottling program.
  • Drive exceptional levels of winery hygiene and general housekeeping.

About You

You have a degree in winemaking and a passion for all things wine! You’ve been exposed to premium cool climate winemaking, and have completed at least two vintages working in a premium winemaking facility. From this experience you can demonstrate that you are enthusiastic, reliable and energetic; with strong communication skills and a desire to learn and grow your career.
